motivational monday

It's been awhile since I've talked about health/fitness around here, so what better time than a Monday morning to bring it up, right?

I was getting ready to leave the house on Saturday, and after changing clothes 10 times I put on my favorite skinny jeans, which left me feeling the opposite of skinny. These jeans are normally a little loose on me and they were tiiiiiight.

I'm not going to lie, I've been way off track with my diet and the gym the last few weeks. This time of year leaves me craving all of the comfort food, and this week, well, this week was delicious.

So, tight jeans is my cue that it's time to get serious, and back on track, before the holidays set in and I'm in real trouble! For me, the hardest part of a healthy lifestyle is staying motivated, so I'm hoping that by checking in here on Mondays with a health/fitness post I'll be able to do that. Feel free to start joining in, by leaving a link to your motivational monday post in the comments, or maybe just by sharing what is motivating you  lately. :]

This week I want to focus on food, because it is the most important part of a healthy lifestyle. I just went grocery shopping and I stocked up on honey crisp apples for breakfast, vegetables for lunch/dinner, and clementines and bananas for snacks.

Here are a few healthy eats that I have lined up for the week:
- quinoa chili from the picture above.
- lentil/squash stew (this is one of the most delicious soups I've ever made, and it's really easy.)
- Sweet potatoes! I can't get enough of them lately. My favorite way to eat them is roasted with salt/cayenne and served with runny eggs.

What is your go-to healthy meal these days?
